My super easy one bowl banana bread is just the thing when you see those bananas start to get brown, spotted, and squishy. I mean, I don’t know anyone that likes to eat a squishy banana. So, into the bowl, they go!

How Ripe Do Bananas Have To Be?

This is perhaps the thing that makes banana bread so unique. We actually have to wait around for this fruit to be ready to go. It is recommended that the bananas be very yellow and have spots on them. I have found that this is just the starting point for me. The darker they get, the more the sugars multiply therefore, the flavor deepens and you end up with the best tasting bread. Is there anyone else that likes to pop a slice into the toaster and then slather the top with a little butter?

Just Where Did Banana Bread Come From?

Seeing as bananas are a tropical fruit from Southeast Asia, they had to slowly make their way here, first making stops in Central America and The Caribbean. Once here though, they gained popularity only in the 1930s due to their price being rather high before then.

Then came different companies selling baking powder. So recipes started popping up that used bananas as the main ingredient and baking powder made it quick and easy to bake. Even eighty to ninety years later we are still interested in making our own banana bread. In 2020, it made the list of the top ten searched recipes.

Additions To My Super Easy One Bowl Banana Bread

Of course, you can add all sorts of extra goodies to the banana bread. Such as chocolate chips, nuts, dried cranberries, fresh blueberries, etc. This recipe doesn’t have too many nuts either. I don’t want the nuts to be the center of attention (unlike my very hyper little boy). I want the sweet banana flavor to shine through.

The pumpkin pie spice doesn’t overpower it or make it taste just like pumpkin bread. I promise! It has a little cinnamon, nutmeg, ginger, and allspice, to enhance the flavor. Mine does not have cloves in it, so go ahead and substitute cinnamon only for the pumpkin pie spice if the cloves make you nervous.

How to Keep Banana Bread Moist

So after all of your hard effort, you want the bread to stay nice and soft, right? Now just follow these simple steps and you’re good to go.

  1. Let the loaf cool to room temperature on a rack. If you use a plate make sure to line it with a paper towel to absorb the moisture that will collect from the bottom of the plate.
  2. Wrap the loaf in plastic wrap two times.
  3. Place in a zip-top bag.

That’s it! Now is the time that you can freeze the loaf if desired. It never hits the freezer in my house. When you are ready, defrost the loaf on a wire rack for 2-3 hours before serving.

Ingredients

  • 4 Medium Bananas Extra Ripe
  • 1/2 Cup Melted Butter
  • 3/4 Cup Sugar
  • 1 Egg Room Temperature
  • 1 tsp. Vanilla
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • 1/4 tsp. Pumpkin Pie Spice
  • 1/8 tsp. Salt
  • 11/2 Cup All Purpose Flour Gluten Free Flour Can Be Substituted
  • 1/4 Cup Chopped Pecans

Instructions

  • Preheat the oven to 350F. Spray an 8.5 x 4.5" loaf pan.
  • In a large bowl, mix mashed bananas, sugar, egg, and vanilla. Use a wisk and mix will.
  • Sprinkle the baking soda, powder, pumpkin pie spice, and salt over the banana mixture. Stir to combine.
  • Add flour and nuts. Stir gently until just combined. Pour into the prepared pan.
  • Bake for 55-60 minutes until a toothpick comes out clean. Take the loaf out of the oven and cool for 20 minutes in the pan. Turn out onto a rack and cool completely. Slice and serve.

Notes

If using gluten-free flour stir in very gently.  Do not over mix.  The xantham gum in it activates right away and will change the texture.
Don’t slice all of the loaves at once unless you are serving it right away.  This will dry out the pieces.

I know that low carb or no carb diets are all viral right now, but I’m just not one of those people. I can live with carbs in moderation very happily. No peace treaty needed to enter into my kitchen.
